Pastry-Chef Urs at Work!
The longer stay at Charly, which was forced by the Corona crisis, is used by each of us in his own way. Ursula, Wally, Markus and Urs hired a tutor to teach them Spanish. Every day we see the four disappear with their schoolbooks under their arm into a separate room. If the Lockdown continues for a long time, we can all talk in Spanish soon!
Urs has made a name for himself as a producer of cream slices and also helps Charly bake bread and croissants. A few days ago, he had the idea of baking Prussians. In Mexico they are called Oreja de Elefante. As always, Charly offered to help him. I offered to be a test eater, but both of them refused because they were afraid that I would overdo it with testing. How can you think of me so badly …
In the morning of April 23, 2020, the time had come. That day Charly baked bread and had to put the big oven into operation anyway. Urs started producing the Prussians in the early morning. I was fascinated to see how delicious rolls of Orejas de Elefante were made from two rolls of puff pastry. They were still pale when they were put in the oven. After fifteen minutes and two turn overs, they looked like Prussiens should look and taste: crispy brown and sweet.
PS: I knew that Urs would pay me back sooner or later for the fun with the croissants. He did that today when he offered me two mini croissants seasoned with chili. Good thing I had a glass of milk on hand!
